Hi everyone,

The Gingerbread barn is done (this is a team project at work).  We are trying to make pigs with fondant but the fondant does not hold its shape as well as we would like.  Is there something that can be added to help with this hurdle?

Have you considered using gum paste or modeling chocolate instead of fondant for figures?  Both hold their shape well.  Gum paste will harden after a few days exposed to air, but modeling chocolate is forever pliable when warmed with your hands, but both will hold their shape very well.  I use modeling chocolate for figures and gum paste for flowers, etc.

I usually make a small ball of crumpled aluminum foil and shape the body or head around that--they don't flatten out that way.

It sounds like your Fondant is too soft and/or your ambient humidity is high.  The easiest thing to do is knead in a 1-2 teaspoons of a gum such as CMC (i.e.: Tylose) or Gum Tragacanth per 8 ounces of Fondant.  Simply knead the powder directly into the Fondant, wrap it tightly in plastic wrap and let it rest on the counter for about 15-20 minutes.  This will firm up the Fondant and allow it be modeled more intricately.   Please keep in mind that after you add additional gum to the Fondant, it will dry much more quickly; therefore your 'play period' (the period that you can play around with it before it starts to crust, crack and dry) will be reduced.  However, I often find adding the additional gum is necessary for anything that has more than simple dimension.  As an alternative, you can also mix your Fondant with Gum Paste using 50% Fondant and 50% Gum Paste.  This creates a paste with similar properties to the Fondant with additional gums kneaded into it that I described above.

I've had the same problem trying to shape figurines with Fondant, so my go-to is marzipan.  This year I intend on trying them all and providing some good instructions on each.  ;D

Like Adam I just add tylose or CMC To my fondant, you can also use pieces of spaghetti inserted into legs, necks etc to help maintain a more upright hold. Florist wire works too, but I use spaghetti in case little fingers get their hands on it and decide to munch!
