Hello! You don't need a stand mixer to make Gingerbread dough. In fact, I have found it easier to mix many formulas (like the 'construction grade' Gingerbread recipe available on this website) by hand; I have made it that recipe about 12 times over the last few months alone.... (Not exaggerating... :-)
Now that said, while you really don't need a stand mixer to make gingerbread dough, it will be pretty rough trying to make Royal Icing by hand. You can use a portable hand held mixer for Royal but since it takes about 8-10 mins to beat it will not be a fun experience. A I highly recommend a 6qt or larger Kitchenaid mixer for those who can afford it. It is an incredible help and would definitely be on my 'essentials' list for anyone who has more than just an occasional interest in baking.
